A, perhaps the, basic New England summer sandwich. The beach shack version is served on commercial hot dog buns, but there is no reason not to use brioche sandwich rolls or other rolls.
Combine:
1 pound boiled or steamed lobster meat, coarsely chopped
1/4 cup mayonnaise
1/4 cup minced celery
Salt and ground black pepper to taste
Divide the lobster mixture among the bottom halves of:
4 brioche sandwich rolls or hot dog buns, split lengthwise and lightly toasted
Divide on top of the lobster mixture:
12 ripe tomato slices (optional)
12 fresh basil leaves (optional)
Cover with the top halves of the rolls, or press the buns together gently, and serve immediately.
